Tex-Mex Salad

Tex-Mex Salad
Ingredients:
- 6 cups romaine
- 4 cups mixed baby greens
- 1 cup black beans (well rinsed/cooked)
- 1 can white shoe peg corn/ or fresh
- 1/2 cup grape tomatoes halved
- 1/4 cup red onion chopped
For Dressing:
- 1 avocado cubed or sliced
- 1/2 lime juiced
- 1 small clove garlic minced
- 1 tbs nutritional yeast
- Pinch of cayenne pepper
Directions:
- Blend dressing ingredients until smooth
- Combine ingredients and toss OR
- Lay ingredients out on a platter in rows
Notes:
- Cilantro is a great touch if you have fresh herbs around
