Asparagus-Arugula Salad with Dill Avocado Dressing
Directions:
- To a bowl, toss the following in a little bit of olive oil, squeeze of lemon, salt and pepper, and chill in the fridge until you are ready to serve
- 1 box of arugula - chop
- 1 cup of peas
- 3 radishes (sliced or diced) - you could use 1 beet if you prefer
- pine nuts (a small handful or 1/8 cup)
- Blanch 1-2 bunches of asparagus (boiling water for 1-2 min and then ice bath)
- Then pat dry and chop into 1 inch pieces.
- Add to other ingredients that were chilling in the fridge
- When ready to serve, add the Dill-Avocado dressing and toss
